Looking for some dinner inspo? Try this smoked turkey rasher and mushroom carbonara


Who doesn’t love a good, luxurious carbonara? Trish Lewis’ version is easily one of our faves – and we promise it will be yours too after you try it.

It’s great as a dinner dish, and also reheats well for lunch the next day if you have any leftovers.

Ingredients:

  • 350g tagliatelle
  • 1 tsp oil
  • 2 shallots, diced
  • 6 garlic cloves, minced
  • 15 button mushrooms, halved
  • 6 smoked turkey rashers, chopped
  • 50ml light cream
  • 100g light cream cheese
  • 1 tsp mustard powder
  • A bunch of fresh, flat leaf parsley, chopped (reserve some for garnish)
  • Salt and black pepper

Method:

  1. Cook the pasta as per packet instructions.
  2. In a wok lightly fry your shallots and garlic in the oil. Once these are golden brown add in your mushrooms and turkey rashers.
  3. When the rashers are cooked add in your cream, cream cheese and mustard powder. Stir well to combine.
  4. Fold in your drained pasta and chopped parsley and season with some salt and pepper.
  5. Serve in bowls with some more fresh parsley sprinkled over each serving.
