Who doesn’t love a good, luxurious carbonara? Trish Lewis’ version is easily one of our faves – and we promise it will be yours too after you try it.
It’s great as a dinner dish, and also reheats well for lunch the next day if you have any leftovers.
Ingredients:
- 350g tagliatelle
- 1 tsp oil
- 2 shallots, diced
- 6 garlic cloves, minced
- 15 button mushrooms, halved
- 6 smoked turkey rashers, chopped
- 50ml light cream
- 100g light cream cheese
- 1 tsp mustard powder
- A bunch of fresh, flat leaf parsley, chopped (reserve some for garnish)
- Salt and black pepper
Method:
- Cook the pasta as per packet instructions.
- In a wok lightly fry your shallots and garlic in the oil. Once these are golden brown add in your mushrooms and turkey rashers.
- When the rashers are cooked add in your cream, cream cheese and mustard powder. Stir well to combine.
- Fold in your drained pasta and chopped parsley and season with some salt and pepper.
- Serve in bowls with some more fresh parsley sprinkled over each serving.
